What is high-quality tofu, and how is it different from regular paneer?

Tofu (or soya paneer) is a plant-based food made from curdled soy milk, which is pressed into a solid block. High-quality tofu is typically made from non-GMO soybeans and is extra-firm, giving it a dense texture ideal for absorbing Indian spices and holding its shape in curries, similar to dairy paneer. The main difference is that tofu is dairy-free, vegan, and lower in fat and calories than traditional paneer.

Is tofu a healthy alternative to paneer?

Extra-firm or super-firm tofu is highly recommended. These varieties have had the most water pressed out, resulting in a denser, chewier texture that closely mimics paneer and holds up well during frying, grilling, or simmering in curries.

How can I prepare high-quality tofu to make it taste more like paneer?

Tofu is naturally mild, so it easily absorbs flavours. Pressing: Always press extra-firm tofu before cooking to remove excess water. This helps it absorb marinades and crisp up better. Marinating: Marinate cubes in a mixture of yogurt (or plant-based yogurt), ginger-garlic paste, and Indian spices (like turmeric, garam masala, and chili powder) for at least 30 minutes. Frying/Sautéing: Lightly pan-fry or air-fry the tofu cubes until golden-brown and slightly crispy before adding them to a curry. This adds texture and helps the pieces retain their shape.
